CHEESY CHICKEN PASTA BAKE RECIPE
This family friendly cheesy chicken pasta bake is so quick and easy to make. Feed a family of 4 for approx. £1.25 per person. Tasty, delicious, filling and healthy. Perfect for a family on the go, only 15 minutes prep and then pop it in the oven.
This cheesy chicken pasta bake is a huge winner in this house, all of my boys absolutely love it. When we became a family in 2020 the boys were not really pasta fans, however now they ask for it all of the time. The best thing about this dish is I can prep it when they are still at school, then just pop it in the oven when we are ready for tea. (Oh there’s another debate.. is it tea or dinner in your house?). The cost of everything is going up and I can throw this together for just £1.25 per head (Price correct Jan 2021 using Tesco as an example).

IS THIS RECIPE SUITABLE FOR FREEZING?
Yes, please allow to cool before placing into a suitable container. This will keep in the freezer for 3 months or the fridge for 3 days.
HOW DO I REHEAT THIS DISH?
If you are freezing the pasta, please defrost before reheating.
Place into the microwave for 2 – 3 minutes or until piping hot.
Cheesy Chicken Pasta Bake
Ingredients
- 400g Diced Skinless Chicken Breast
- 350g Dried Pasta
- 120g Cheddar Cheese, grated
- 2 Cloves Garlic [Crushed]
- 1 Red Pepper [Deseeded, Sliced]
- 1 Onion [Peeled, Diced]
- ½ tsp Oregano
- ½ tsp Basil
- 500g Passata
- 1 Chicken Stock Cube
- Pinch Salt
- Pinch Black Pepper
Instructions
- Preheat oven to gas mark 6/200°C/Fan 180°C
- Cook the pasta as per the packet instructions.
- Make Chicken Stock using 200ml boiling water and 1 Chicken Stock cube. Add this to a pan along with onion, Red pepper and garlic. Cover and simmer until most of the liquid is reduced.
- Add the diced chicken, oregano, basil, salt and pepper. Brown the chicken and then stir in the drained pasta and passata.
- Pour into a large baking dish and top with grated cheese.
- Pop into the oven for 25 – 30 minutes.
